Step-by-Step Breakdown

  1. Mix your ground beef (or a blend of beef and pork) with Champ’s Choice Birria Style Blend to build deep, savory flavor from the start.
  2. Roll the seasoned meat into 4-ounce balls, this helps keep the smash burger technique effective.
  3. Sauté sliced onions on a griddle until they turn soft and golden.
  4. Press the meatballs onto the griddle, creating crispy-edged patties. Cook them to the right temp, 160°F if using pork, or 140°F if all beef.
  5. Mix beef broth with more Champ’s Choice and warm it up. This is your dipping sauce, just like a classic birria taco.
  6. Get a nice golden crust on both sides of each slice.
  7. Lay shredded cheddar cheese and jalapeño slices on the griddle, then press slices of toast onto the melting cheese and flip. This creates a crispy, spicy cheese crust.
  8. Stack a slice of plain toast, a smash patty, caramelized onions, shredded pepper jack, another smash patty, and finish with the cheese-crusted toast on top.

Take your patty melt to the next level with Champ’s Choice Birria Style Blend! This birria-inspired twist on a classic features rich, slow-cooked flavors in a crispy, cheesy, melty sandwich. Perfect for game day or any time you’re craving bold bites!

Ingredients

  • 2 lbs ground meat (at least 1 lb ground beef; use all beef or 1:1 beef & pork)

  • 2 white onions, sliced

  • 8 slices Texas toast

  • 1 cup shredded pepper jack cheese

  • 1 cup shredded cheddar cheese

  • 2 jalapeños, sliced

  • 1 (14 oz) can beef broth

  • 3 tbsp Champ’s Choice seasoning, divided

  • Chopped cilantro, for garnish

  • Diced white onion, for garnish

  • Lime wedges, for garnish

Directions

  • Combine 2 tbsp of Champ’s Choice seasoning with ground meat. Form into 8 equal 4-oz balls.
  • Cook sliced onions on a medium-hot griddle until soft, then set aside.
  • Smash patties onto the griddle, cook until crisp, flip, and cook through (160°F for pork, 140°F for beef).
  • Heat beef broth with 1 tbsp of Champ’s Choice seasoning.
  • Grill both sides of Texas toast until golden.
  • Spread shredded cheddar and jalapeños on the griddle, press four slices of toast on top, and flip.
  • Stack a plain toast slice, 1 patty, onions, shredded pepper jack, 2nd patty, and finish with cheese-crusted toast.
  • Slice diagonally and serve with birria broth, garnished with cilantro, diced onion, and lime.
